  • Help with lunch activities at Cinnamon Ridge Park *Note that this is a new location* off of Slater Road in Eagan, west of the Cinnamon Ridge Apartments (Cliff Road at Cedar Avenue) (map)
  • In addition to the Easter-hosted site at Cinnamon Ridge Park, the Mobile Lunch Box brings lunches and additional food to the following locations: Cedar Knolls in Apple Valley, Cinnamon Ridge Park in Eagan, Emerald Hills in Inver Grove Heights, Rahn Elementary School in Eagan, and O’Leary Park in Eagan

What Is It?

  • Launched in 2014, as a partnership between Easter and The Open Door, The Mobile Lunch Box has grown to include nine sites in 2017.
  • The Mobile Lunch Box is a one-of-a-kind approach to addressing children’s hunger in the summertime when parents are at work and children are not in school accessing free and reduced lunch programs.
  • The Mobile Lunch Box is a retrofitted short bus lined inside with café counter style seating.
  • The Mobile Lunch Box drives into neighborhoods with healthy lunches filled with whole fruit, vegetables, and lean meats and cheese on whole grain breads.
  • Volunteers share lunch and join in fun enrichment activities with children and families at each Mobile Lunch Box site.
  • Easter has sponsored a Mobile Lunch Box site at Cinnamon Ridge apartments in Eagan since 2014.
  • In 2016, we served approximately 60 kids each week at the Cinnamon Ridge site.
